So the last day or so I’ve been fighting with my Intel NUC and windows 10. Basically windows would update and then poof no video. After trying to determine the problem I decided it had to be video drivers. On installation before it updated I made sure to enable Remote Desktop. This solved it for me as I was able to login to the now headless NUC with my trusty Linux box and install the older Intel video drivers.
